I extend my daily intermittent fasting window to 18-20 hours and eat only at dinner within 2-4 hours. During the day I consume no calories and only a few cups of coffee or tea. If I’m working out, I have a small protein shake to promote muscle glycogen resynthesis post-workout and to speed up recovery. I don’t do omad for weight loss but because it’s very convenient for me. Fasting helps cognition and my brain stays sharp throughout the day. At dinner, for my one meal a day, I consume 2 large dishes that focus on micronutrient density. Foods on the ketogenic diet are very nutritious and I get all my micros in with additional supplementation. Unlike the regular Indian kid, I grew up eating macaroni and cheese instead of dal chawal and sabzi roti. So Mac N Cheese is very special to me, in fact we used to call it Cheese Macaroni, Mac N Cheese I learnt later once I saw American TV. Anyway I knew I had to make a keto mac and cheese and so here it is. Enjoy! Ingredients – 500 grams Cauliflower – 100 grams Ham (Chopped) – 1 Small Onion – Red Chilly Flakes – 300 ml Heavy Whipping Cream – 150 grams of Cheese – 50 grams Butter – Fresh Thyme – Grated Nutmeg – Cayenne Pepper – 1/2 Chicken Stock Cube – Fresh Pepper – Garlic Powder – 1 Tsp Garlic Butter – 25 grams Preparation 1.
