Ingredients for Vada (Deep Fried Mashed Cauliflower balls): 1/2 medium sized caulliflower – cooked 30 ml olive oil 1/4 tsp asafoetida 1 tsp mustard seeds 1 tsp cumin seeds handful of chopped curry leaves handful of chopped coriander juice of 1 medium sized lemon salt to taste 1/2 tsp turmeric powder 1 tsp cayenne pepper powder 30 gms psyllium husk 20 gms linseed/flax meal 1 large egg 40-50 gms of unflavoured whey protein powder Ingredients For Green chilli, ginger and garlic paste: 4 green chillies 4 cloves of garlic 20 gms ginger 30 ml olive oil Method for green chilli, ginger and garlic paste: Add all ingredients in a blender bowl and blend them to a smooth paste. For fried green chillies: 40 ml olive oil 5-6 green chillies Method for fried green chillies: Gently add green chillies in hot oil and deep fry them for just 1 minute. Make sure you maintain some distance as they are bound to splutter. Take them out and let them cool. Ingredients for green chilli and coriander paste: 1/2 bunch of coriander leaves – chopped and washed 1 clove of garlic 4 green chillies 30 ml of water salt to taste Method for coriander and green chilli chutney: Add all ingredients in a blender bowl and blend it to a smooth paste. Method for Vada (Deep Fried Mashed Cauli Balls): Cook cauliflower in boling water or microwave until well done. Drain the cooked cauli. Mash it using a mixer and keep aside. Heat oil in a pan and add asafoetida powder Add mustard seeds and cumin seeds and let them crackle. Add curry leaves and let them splutter. Add ginger garlic and green chilli paste and cook for 2 minutes. Add salt, turmeric powder and cayenne pepper powder and coom for 2 more minutes. Add mashed cauli and mix it very well. Cook for another 5-6 minutes. Refigerate until the mixture has cooled down (20-25 mins) Add psyllium husk and mix really well. Add linseed/flax meal and mix again. Mash should have thickened now. Add egg and mix for the last time Make some balls out of the mash and roll them gently in a box with unflavoured whey protein powder. Make sure they are coated with whey from all sides. Gently add the balls to hot oil and deep fry for 3-4 minutes or until golden brown. Cut the burger buns in half and spread coriander and green chilly chutney on them. Stuff them with cauli patties and enjoy with deep fried green chillies and some more chutney or any sauce of your choice.
