Crustless Quiche – LCHF, Keto, Gluten free, Banting

This quiche uses danish salami instead of pastry. This is a great low carb alternative and very tasty too! Ingredients: -2 slices of danish salami per quiche (this recipe makes between 12-15 so you will need between 24-30 slices of salami) -60 g thickened cream (35% milk fat) -60 g tasty cheese, cut into small pieces or grated -1/4 tsp pepper -a few sprigs of fresh parsley, roughly chopped -3 eggs Method: Preheat oven to 200 C or 390 F -Line a 12 hole muffin tray with silicone moulds. You can make these without the silicone moulds but these really help with cleaning up -put two pieces of salami together, then “line” these around each muffin hole Bake in the oven for 10 minutes Meanwhile… -combine eggs, cream, cheese, parsley and pepper in a jug and set aside until salami comes out of the oven -remove salami from the oven and allow it to cool slightly. Reduce the temperature of the oven to 180 C or 350 F -pour small amounts of the egg mix into the salami “pastry cases” (leave the salami in the moulds and tray). You may have a small amount of the egg mix left over.
